— Moved down the road and did laundry

J's Seafood Pasta Salad

  • 1 pkg (8 oz.) quick-cooking mini fusilli or shell pasta or other pasta of your choice
  • 8 oz. chunk-style imitation crab meat, chopped
  • 1 cup cubed cheddar cheese
  • 1/2 cup sliced scallions or chopped red onion
  • 1 cup thinly sliced celery
  • 1 cup frozen peas
  • 2 avocados, halved and pitted, in the skin
  • fresh greens

Dressing

  • 1 cup salad dressing or mayonnaise
  • 2 tbs fresh or dried parsley, chopped
  • 1 tbs lemon juice
  • 1 tsp sea salt
  • 1 tsp dried dill weed
  • 1/2 tsp freshly ground pepper
Sprigs of fresh dill or additional dried dill weed for garnish

Instructions

Cook the pasta according to package directions, except slightly under-cook it to prevent it from becoming mushy. Rinse, drain, and cool. Place in large bowl. Add the imitation crab meat, cheddar cheese cubes, scallions, and celery. Mix lightly. Combine the dressing ingredients in a medium bowl. Pour the dressing over the pasta mixture. Mix lightly, cover, and refrigerate several hours or overnight. Garnish with sprigs of fresh dill or additional dried dill weed.

Place a half avocado on one side of a plate, and a bed of fresh greens on the other side of the plate. For each person, use an ice cream scoop to scoop a ball onto the half avocado and then another ball or two onto the fresh greens.

Serves 4.
We took it easy this morning after such a long day yesterday. I had my normal breakfast then started to downselect images from yesterday morning in Capture One (C1). We prepped the RV to move then hooked up the Jeep to tow. We got underway around 11:30 and headed south on I-19.

We stopped at a Wendy's at the Pilot Travel Stop at Exit 19 around 12:13 for J to get some take-away. We got underway again at 12:17.

We went through Nogales and came within 50 yards of the border with Mexico.

We went to the Anda Laundry in Nogales at 12:45 to do our laundry. It was a brand new facility with a debit card system for payments. The washers and dryers had very short cycle times and seemed to work just fine. We went back to the RV after getting the laundry started and I had lunch of ham and Swiss on rye with a glass of Coca Cola Classic followed by a banana and an apple. We left at 2:17, and it had to be the shortest laundry stop ever!

We went to Patagonia Lake State Park at 2:48. J really liked the scenery as we approached the park, but we were both mortified after we registered at the manned entrance station to camp for two nights and then drove to the campground to find a site. The sites were packed closely together and almost all were full — not the kind of place we like to stay. Because the ranger at the entrance station said the elegant trogon had left the area, we had no need to stay there, and decided to leave. Before we did, we used their dump station and took on fresh water. It was no problem getting a refund as we left the park around 3:40.

We looked for a boondocking spot in the Coronado National Forest near the town of Patagonia. Our friend Andy Baird had boondocked near there several years ago and J had always wanted to boondock at that same spot. Unfortunately, Andy didn't have a GPS at the time and didn't know the exact location, so we were on our own to find a good location. As we were heading down the road, we flagged down a Border Patrol vehicle to ask if the officer recognized the site that Andy had taken pictures of and which J had on her iPhone. He didn't recognize the area, but recommended the areas that we had already passed that had some RVs already in them. We kept going down the road and found a nice site.

We were parked and level by 5:15. We even had a nice, fast Verizon Wireless Broadband signal. :) I continued downselecting images from yesterday morning in Capture One (C1). I won the Quantum Cable CZ that I sniped from eBay. :)

We had dinner at 6:50 of a grilled chicken salad that was very tasty.

After dinner, I finished downselecting the images from yesterday morning in Capture One (C1). J made a batch of her Seafood Pasta Salad because it's better to boil water in the cool evening instead of the warm afternoon. I finished putting away my laundry before going to bed.
