Tucson (BLM) to Madera Canyon (Bog Springs), Arizona, USA
— A rainy day

J's Grilled Squash

  • 1 small zucchini, sliced into rounds
  • 1 small yellow squash, sliced into rounds
  • 1/2 red onion, chopped
  • olive oil
  • salt and pepper
  • grated parmesan cheese
Take a large piece of foil and double it. Spray with non-stick spray. Place the zucchini, yellow squash and red onion on the foil, mixing them. Drizzle olive oil over the veggies. Salt and pepper to taste.

Cover with another large piece of foil, doubled, folding all edges multiple times to make a nice, flat packet.

Grill over high heat until the veggies are cooked through, but not overdone, approximately 20 minutes (turn the packet over midway through).

Open the packet and sprinkle the veggies with grated parmesan cheese. Serves 3.

J's Cherry-Topped Pie

  • 1/3 cup butter, melted
  • 1 1/3 cup graham cracker crumbs
  • 1/3 cup sugar
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 can sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 tsp vanilla
  • 1 can cherry pie filling, chilled (or other fruit pie filling if desired)
Melt the butter in the microwave for 15-20 seconds in a glass bowl. Add graham cracker crumbs and sugar and mix thoroughly. Spread the crumb mixture in a 9-inch pie pan. Use a small measuring cup to press the crumbs firmly and evenly over the bottom and sides of pan to form a crust. Chill. Beat cream cheese in a mixing bowl until light and fluffy. Add sweetened condensed milk and blend thoroughly. Stir in lemon juice and vanilla. Turn into crust. Refrigerate 2 to 3 hours or until firm. Top with chilled cherry pie filling before serving. Serves 6.
It was raining when we awoke this morning, so we took it easy. I had my regular breakfast of Post Raisin Bran with skim milk followed by a cup of LavAzza Gran Filtro Dark Roast coffee in my Bodum Bistro Double-Wall Mug. The rain stopped, but lots of clouds stayed around. I did some computer work then processed four images for the blog. I worked up a blog entry then started to prep the RV to move. We hooked up the Jeep to tow and left at 11:35.

We went to a Burger King around 11:50 so J could get her fast-food fix. I had already had more than enough fast food for the month by going to McDonalds for dinner two nights ago. She got a BLT (on their secret menu) to go while I made a ham-and-Swiss sandwich in the RV. We ate lunch in the RV then left around 12:25.

We went to a Fry's Food & Drug at 12:30 to do some grocery shopping. J went right in and I stayed in the RV and checked gas prices. I went inside to walk around with J. We left at 1:45 and ...

Went to a nearby Shell to top off the Jeep at $2.679/gal — the last relatively cheap gas we'll be able to get for a while. We got underway around 1:55 and took I-19 south out of town.

We went to the Bog Springs Campground in Madera Canyon at 2:45 and we found a nice site for solar electricity. It also happened to be the only site suitable for an RV that wasn't occupied! I tilted the solar-electric panels and then cleaned the accumulated dirt off of them to increase their efficiency when the sun comes out tomorrow. Light rain started at 3:30 just after I finished cleaning off the Jeep windows. J discovered that we have a nice Verizon Wireless Broadband Access signal here. :) There was a painted redstart in the tree outside my window when I sat down to go online! Shortly thereafter, there was a white-breasted nuthatch then a yellow-eyed junco out in the same tree! I did some computer work and the rain stopped. It started to rain heavily around 4:05, then stopped by 4:45. Light rain started again around 5:25, shortly after we were committed to grilling dinner. :( I went out and started the grill, then grilled chicken breasts, that had been marinating in Kroger brand garlic and herb marinade, and J's Grilled Squash (recipe above right). The rain stopped by the time I was done.

We had dinner around 6:10. The marinade wasn't as effective on the chicken breasts as it had been on the chicken tenders. :(

After I did the dishes and we each took a shower, J served some of her Cherry-Topped Pie (recipe right). That was the first time I've had it and it was delicious! I think it would be even better with blueberry pie filling instead of the cherry pie filling because the cherry pie filling was really sweet. I did some computer work then worked up a blog entry.
