Rocky Mountain National Park (Moraine Park), Colorado, USA
— Lunch and internet in Estes Park
J's Sour Cream Chicken Enchiladas
- 3 cups cooked, shredded chicken (you can use just about any type of chicken, light or dark for this; it can be cooked in the crockpot or in the oven, or on the stovetop)
- 16 oz carton sour cream
- 1 large onion, diced, or 1 bunch of green onions, sliced (save a few of the green onions for topping)
- 2 large cans red Las Palmas Enchilada Sauce, Medium (or Mild if you prefer mild)
- 2 cups shredded Cheddar cheese plus 1 additional cup for the top
- 1 package of 12 whole-grain tortillas
Mix the chicken, sour cream, onion, and 2 cups of the cheese in a large bowl.
Next, prepare two 9 x 9" cake pans by spraying with nonstick spray. Then spoon in some of the enchilada sauce, enough to cover the bottom of the pan with a thin layer.
For each enchilada:
- Lay out an enchilada on a flat surface.
- Spoon some enchilada sauce on it, just enough to cover it but not drip over the sides. This will keep the enchilada moist.
- Use a large spoon or ice-cream scoop to put some enchilada filling down the middle of the tortilla, in a stripe from top to bottom. You may need to shape the filling with your hands.
- Carefully roll up the enchilada without letting any of the filling spill out.
- Place the enchilada in the pan and continue adding more enchiladas. You may need to overlap them a bit.
- Pour 1/2 of the remaining enchilada sauce over each pan of the enchiladas. It's best if you can completely cover them, but you may not have quite enough, so leave the outer edges uncovered if necessary.
- Sprinkle the remaining cheese over the tops of the pans (extra cheese if you like it, too).
- If you used sliced green onions, you may wish to sprinkle a few of them on the top to look pretty.
Bake at 350 degrees for 45 minutes or until bubbly and hot. Each pan will serve about 4 adults (1.5 enchiladas per person). You can freeze the second pan if you would like. If you want you can save leftover enchiladas individually in saran wrap and heat them up in the microwave another day.
We drove around the park, and the light was duller than we thought it would be, so we didn't photograph anything.
We returned to the RV around 9:35. I worked up a blog entry then showered. I read more of the November 2009 Outdoor Photographer. We left in the Jeep at 11:30.
We went to the Big Horn Restaurant in Estes Park at 11:45 for lunch. I had a Club Sandwich and J had a BLT. We left at 12:20.
We went to the Estes Valley Public Library in Estes Park at 12:27 to use their free Wi-Fi. The library building has a fantastic design. It's new and has a mountain resort feel to it. The first floor has shelves and the second floor has meeting rooms and computer space. There are many computers available "for rent" and there are many siting areas, complete with convenient outlets, for using your own laptops. The Wi-Fi connection was fast too. :) It was one of the nicest library Wi-Fi experiences we've had. While polishing the blog entry for yesterday, I discovered and read Ian Plant's review of the Nikon 14-24 and that got me really interested in that lens again. Before starting to read through the November 2009 Outdoor Photographer, I told J that it would be dangerous because I'd probably end up wanting something. :) I looked at ways to attach a Lee Foundation Kit to the Nikon 14-24, and found some DIY solutions that I'll have to investigate further. I also saw that Lee Filters is planning to release a dedicated filter holder for the Nikon 14-24, so the filter problem might be solved and I'll "have to" get one. The sky had cleared while we were in the library, and the light was looking good. We left at 2:55.
We returned to Rocky Mountain National Park via the Fall River Entrance Station so we could look for bighorn sheep along Fall River Road. We didn't see any bighorns, but we did see a nice bull elk walking right along the road. The light started to deteriorate by the time we reached Rocky Mountain National Park because it was snowing. :( The large group of bull elk were still hanging out near Sheep Lakes, but the light was too flat.
We returned to the RV at 3:45. We watched an episode of Desperate Housewives on DVD. I finished looking through the November 2009 Outdoor Photographer. We turned on the generator at 5:05 to run it for an hour because we didn't get much solar-electric power today. I downselected images in Capture One (C1).
We had dinner at 6:10 of leftover (frozen) J's Sour Cream Chicken Enchiladas with fresh guacamole and tortilla chips. As I was putting away the salsa jar and leftover enchilada, I discovered that a bowl of J's Four Bean Salad had tipped over in the refrigerator and had spilled its juice all over the bottom shelf. It was a mess to clean up.
I had some Asbach Uralt while we watched another episode of Desperate Housewives on DVD. We're watching Season Five, and the blonde creepy guy is making the episodes much more interesting than usual. I downselected more images in Capture One (C1).
