Uinta National Forest (Nebo Loop), Utah, USA
— Photographed some cascades on Peteetneet Creek
We got up around our usual time and I had my usual breakfast. We left in the Jeep around 8:40. It was 36°F (2°C) outside and snowing "Styrofoam pellets" as J called them.
We headed up the road to see if Mt. Nebo looked good. It was socked in by solid clouds that didn't look like they'd break any time soon, so we turned around and headed back down the hill.
We went to some nice cascades on Peteetneet Creek that we both liked on the drive up yesterday, and got out to photograph them. The bank from the road down to the creek was rather steep, so we started by photographing from the road. After exploring a bit, I thought we could get down to the cascades by going upstream and then walking downstream along the creek. We put on our gum boots and made it to the cascades. It was really nice to be able to stand in the middle of the creek to get exactly the shot I wanted instead of having to stay on the bank or on rocks to get the shot like I usually do. The image of the cascades (left) is my favorite image so far of our time in the Wasatch Mountains this fall! I used a polarizer to knock off most of the reflections from the wet rocks and a 3-stop ND (neutral density) filter to lengthen the exposure and blur the water.
Spray an 8 x 8 inch pan with non-stick spray. Arrange chicken in the pan. Top with cheese slices. Combine soup and wine. Pour evenly over chicken. Sprinkle with stuffing mix. Drizzle butter over crumbs; bake at 350 degrees for approximately 1 hour.
Serves 4.We returned to the RV around 11:15. We got the reservations for the SANParks (South Africa National Parks) accommodations, and the reservations for one park were incorrect so I emailed them to have it corrected. I downloaded and downselected the images from this morning.
I had lunch around 12:30 and read some old Popular Photography magazines. Then I did some computer work and cleaned up some things in the RV, and J prepared a batch of Creamy Baked Chicken Breasts. We left in the Jeep around 5:15.
We headed down the hill and stopped at several locations with good fall color in the background so I could take pictures of J because she needs an updated photo of herself.
We returned to the RV around 6:15.
We had dinner around 6:25 of Creamy Baked Chicken Breasts and a garden salad. The chicken was excellent!
After dinner, I wrapped my tripod legs in MARPAT Camo Form to replace the ACU (Army Digital) Camo Form. Then I processed an image for the blog and the inverter complained about low voltage again and shut itself down. :( We had some Blueberry Bars and ice cream for a late dessert.

- 4 chicken breasts, each cut in half lengthwise
- 5 slices Swiss cheese
- 1 can low-fat cream of chicken soup, undiluted
- 1/2 cup dry white wine
- 2 cups herb-seasoned stuffing mix
- 1/4 cup butter, melted
Spray an 8 x 8 inch pan with non-stick spray. Arrange chicken in the pan. Top with cheese slices. Combine soup and wine. Pour evenly over chicken. Sprinkle with stuffing mix. Drizzle butter over crumbs; bake at 350 degrees for approximately 1 hour.
